Ingredients
- 1 kg ripe quinces
- 850 g sugar

With a cloth rub off the fuzzy coating from the quinces. Boil the quinces in little water until they are soft and the skin bursts. Remove the skin and core, then puree the flesh.

Weigh the puree and cook it with an equal amount of sugar for about 25 minutes while stirring constantly until it turns a reddish tone.

Spread the mixture about 1 cm thick onto a baking sheet lined with parchment paper and loosely cover with parchment or a kitchen towel. Let dry in a warm place for at least one day until firm. Cut small squares from the mass and let them dry covered with a kitchen towel for several more days.
