Quark- Plum Pockets

Ingredients
- 250 g flour (and some for the work surface)
- 100 g sugar
- 0.25 cube yeast
- 75 ml milk
- 20 g butter (melted)
- 400 g plums
- 150 g quark (20% fat)
- 2 egg yolks
- 0.5 untreated lemon (zest)
- 1 egg yolk (for brushing)
- 20 g butter
- 6 sheets puff pastry (10 x 20 cm each)
Instructions

Prepare a yeast dough from the flour, 50 g sugar, yeast, milk and 20 g melted butter and let rise for 30 minutes. Line a baking sheet with parchment paper.

Let the puff pastry sheets thaw. Roll out the yeast dough on lightly floured surface to 20 x 35 cm. Place one puff pastry sheet on top, fold the yeast dough over it, then place another puff pastry sheet on top and fold the dough again.

Place the yeast-puff pastry package in the refrigerator for at least 10 minutes, roll out again to 20 x 35 cm, cover with two more puff pastry sheets, refrigerate. Repeat the process a third time and refrigerate once more.

Roll the dough to about 60 x 60 cm, chill for 15 minutes. Preheat oven to 200°C. Wash, pit and quarter the plums lengthwise. Melt the remaining butter and mix with quark. Add two egg yolks, the rest of the sugar and lemon zest and stir in.

Cut the dough into 16 squares. Place a spoonful of the quark mixture in the center of each square and arrange plum quarters on top. Fold the corners inward, press together at the middle and place the pockets on the baking sheet. Brush with beaten egg yolk. Bake in the oven (middle rack, convection 180°C) for about 30 minutes.
