Quark-Erdbeerngratin

Ingredients
- 350 g strawberries
- 2 stems Mint
- 400 g quark
- 20 ml peppermint liqueur
- 80 g dark chocolate
- 4 egg whites
- 1 tsp lemon juice
- 200 g powdered sugar
- 250 g strawberries
- 0.5 orange (juice)
- 1 Tbsp vanilla sugar
- powdered sugar (for dusting)

Wash, trim and slice the strawberries.

Preheat the oven to grill mode.

Rinse the mint, shake dry and pluck the leaves. Set aside a few for garnish. Roughly chop the rest. Mix the quark with the liqueur. Add the mint and grate the chocolate over it. Fold everything together. Whip the egg whites with lemon juice until stiff peaks form. Gradually sift in powdered sugar and continue whipping to stiffness. Fold about half of this mixture into the quark cream and pour into four oven‑proof ramekins. Arrange strawberries on top and finish with the remaining meringue. Bake for 8–10 minutes until lightly golden.

For the sauce, wash and trim the strawberries, then puree with orange juice and vanilla sugar. Strain through a fine sieve and serve in small bowls.

Dust the quark dessert with powdered sugar and garnish with the remaining mint. Serve together with the strawberry sauce.
