Ingredients

  • 1 kg pumpkin flesh (gross weight about 1.5 kg)
  • 1 kg gelatin sugar
  • 1 vanilla pod
  • 1 lemon (unprocessed)
  • 1 orange (unprocessed)
  • 1 packet citric acid

Instructions

    Grate the pumpkin flesh coarsely. Mix with 900 g gelatin sugar in a pot. Split the vanilla pod lengthwise and cut into about 2 cm pieces; stir them into the pumpkin mixture. Let it steep overnight.

    Thinly peel the lime and orange, cutting the zest into very fine strips. Squeeze out the juice of the lemon and orange. Bring the juice with the remaining gelatin sugar to a boil. Add the citrus zest and simmer gently for 5 minutes.

    Add the citrus zest with the liquid to the pumpkin mixture and cook bubbling for 4 minutes while stirring occasionally. Stir in the citric acid. Immediately pour into clean jars and seal tightly.
