Ingredients

  • 1.5 kg pumpkin
  • 1 lemon
  • 1 orange
  • 100 ml apple juice
  • 1 tbsp freshly grated ginger
  • 500 g gelatin sugar

    Peel, deseed the pumpkin and cut the flesh (about 1 kg) into thin strips. Squeeze the juice of the lemon and orange. Add the lemon, orange, and apple juices along with the ginger to the pumpkin and bring to a boil while stirring occasionally.

    Cook the pumpkin for about 20 minutes until it is tender but not falling apart, then stir in the gelatin sugar and continue cooking for 4 minutes while bubbling. Pour the hot jam into prepared jars and seal immediately.
