Potatoes in Spanish-Style Tomato Sauce

A fresh root vegetable side dish featuring potatoes simmered in a vibrant tomato sauce inspired by Spanish flavors, served with a sprinkle of parsley.

Ingredients

  • 800 g mostly firm potatoes
  • Salt
  • 6 tomatoes
  • 1 onion
  • 1 Garlic clove
  • 1 mild red pepper
  • 2 tbsp olive oil
  • 1 tbsp Tomato Paste
  • Tabasco
  • brown sugar
  • oil (for frying)
  • 1 tbsp freshly chopped parsley

Instructions

    Peel the potatoes, roughly cube them and cook in salted water for about 5 minutes. Rinse with cold water and drain.

    Heat tomatoes over boiling water, rinse, peel, quarter, seed and dice. Peel and finely dice onion and garlic. Wash, halve, deseed and chop pepper. In hot oil sauté onion and garlic for about 2 minutes, add tomatoes and simmer for about 5 minutes. Season with Tabasco, salt and a touch of sugar.

    Pat potatoes dry if needed and fry in hot oil for about 5 more minutes until golden brown. Mix with the tomato sauce and serve sprinkled with parsley.
