Nut Rice with Basil

Ingredients
- 60 g wild rice
- 2 tbsp butter
- 1 small onion
- 250 g long grain rice
- 500 ml vegetable broth
- 2 tbsp raisins
- 50 g Pine nuts
- 0.5 bunch Basil
- 0.5 orange (untreated)
- salt to taste
Instructions

Cook the wild rice according to package instructions and set aside.

Melt the butter in a pot.

Peel and finely dice the onion, then sauté it in the butter until translucent. Add the rice and stir until fragrant. Pour in enough vegetable broth to create a "liquid porridge," bring to a boil, then simmer until cooked (15-30 minutes depending on variety). Stir in more broth as needed.

After about 10 minutes of cooking, add the raisins.

Toast the pine nuts in a dry pan until golden brown and set aside.

Finely chop the basil leaves.

Just before the end of cooking, add the basil, grated orange zest, toasted pine nuts, and cooked wild rice. Mix well and adjust seasoning if necessary.
