Fried Wontons with Potato Filling

Ingredients
- 400 g starchy potatoes
- 2 Eggs
- 1 tsp Sesame oil
- 1 chili pepper, finely chopped
- soy sauce
- 20 wonton wrappers (Asian grocery store)
Instructions

Boil the potatoes in their skins with salt for about 30 minutes. Drain, peel, mash through a potato ricer and let steam off slightly.

Separate the egg yolks from the whites. Mix the mashed potatoes with the yolks, sesame oil, chopped chili pepper, and season with soy sauce to taste.

Place a tablespoon of the potato mixture onto each wonton wrapper (cut into 10 cm circles if not round).

Brush the edges of each wrapper with egg white, fold in half to form crescents, press the seams with a fork.

Deep‑fry the crescent shapes in hot oil for about 2 minutes until golden brown. Drain on paper towels and serve with dipping sauces of choice.
