Ingredients
- 600 g waxy potatoes
- 2 onions
- 1 stalk of leek (white part only)
- 2 tbsp butter
- 1 l meat broth
- 400 g smoked pork belly (sliced)
- 3 sprigs thyme
- 1 bay leaf
- Salt
- freshly grated nutmeg
- thyme for garnish
Instructions

Peel the potatoes and onions. Dice the potatoes and slice the onions into strips. Wash, trim, and cut the leek into rings. Sauté the vegetables in hot butter until colorless. Deglaze with meat broth. Add the bacon, thyme, and bay leaf, cover, and simmer gently for about 30 minutes.

Remove the bacon and herbs from the soup and cut the bacon into pieces. Roughly puree the soup and season with salt and nutmeg.

Serve in bowls garnished with thyme.
