Onion Soup with Beer and Cheese Bread

Ingredients
- 700 g onions
- 2 tbsp oil
- 1 tsp sugar
- Salt
- black pepper (freshly ground)
- 1 l beef broth
- 200 ml beer
- 2 Garlic cloves
- 1 tsp lemon juice
- 1 tsp freshly chopped thyme
- 4 slices baguette (or white bread, cut lengthwise)
- 80 g grated Gruyère cheese
- thyme for garnish

Peel the onions and slice them into thin rings. Heat the oil in a pot and sauté the onions for about 10-15 minutes until soft. Season with sugar, salt, and pepper, then simmer for another 10 minutes, stirring occasionally, until they turn light brown.

Add the broth and beer to the pot, bring to a boil, and let it simmer for an additional 15 minutes. Peel the garlic cloves and press them into the soup, seasoning with lemon juice, thyme, salt, and pepper.
