Ingredients

  • 4 onions
  • 2 bunches of soup greens
  • 500 g soup bones
  • 500 g beef soup meat
  • 1 tsp peppercorns
  • 2 tbsp butter
  • 20 g clarified butter
  • 1 bunch chives
  • Salt
  • freshly ground pepper

Instructions

    Peel and halve one onion, then brown the halves on a sheet of foil over high heat. Wash, trim and roughly chop a bundle of soup greens. Add the browned onion halves, bones, meat, peppercorns and salt to a large pot. Fill with water until the meat is just covered, bring to a boil briefly, then simmer partially covered over low heat for about 2 hours.

    Strain the finished broth through a fine sieve. Measure out 1 liter; use the remaining liquid and meat elsewhere. Wash, trim and dice the leftover soup greens into small cubes. Heat butter in a pot and gently sauté the soup greens for 5 minutes while stirring. Add the broth, bring to a boil briefly, then simmer on low heat for another 10 minutes. Peel the remaining onions, slice them into thin rings, and roast them in hot clarified butter in a pan. Season the soup with salt and pepper, add the roasted onion rings, and sprinkle chopped chives over the top before serving.
