Mediterranean Onion Soup with Capers and Dried Tomatoes

Ingredients

  • 700 g onions
  • 3 tbsp butter
  • 2 tbsp sugar
  • Salt
  • black pepper (freshly ground)
  • 200 g dried tomatoes in oil (1 jar)
  • 2 tbsp capers
  • 800 ml beef broth
  • 300 ml dark beer (or malt beer)
  • 2 Garlic cloves
  • 1 tsp lemon juice
  • coriander

Instructions

    Drain the tomatoes, reserving 2 tbsp of the oil. Dice the tomatoes into small cubes. Drain the capers and finely chop them. Peel the onions and slice them thinly into rings. Heat the oil with butter in a pot and sauté the onions for about 10–15 minutes until soft, then remove from the pot. Add the remaining cooking fat to the pot, season with sugar, salt, and pepper, and stir until lightly caramelized. Add the capers and tomatoes, let them caramelize briefly, then return the onions.

    Add the broth and beer, bring to a boil, and simmer for another 15 minutes. Peel the garlic cloves and press them into the soup, seasoning with lemon juice, salt, and pepper to taste.

    Serve the soup in bowls, garnish with coriander, and serve immediately.
