Classic Onion Soup with Cheese Bread

Ingredients
- 600 g vegetable onions
- 1 Garlic clove
- 4 sprigs thyme
- 2 tbsp butter
- 150 ml dry white wine
- 800 ml meat broth
- 1 bay leaf
- 100 g alpine cheese
- Salt
- black pepper (freshly ground)
- 12 small, narrow baguette slices
- 1 tsp Caraway seeds

Peel the onions, halve them and cut into thin half-rings. Peel the garlic and finely chop it. Wash the thyme, shake dry and pluck off the leaves. Heat the butter in a pot, sauté the onions and garlic until lightly browned. Deglaze with white wine and add the broth. Add the bay leaf and thyme leaves. Let the soup simmer gently for 15-20 minutes uncovered. In the meantime grate the cheese. Preheat the oven grill. Season the soup, remove the bay leaf, adjust salt and pepper, and ladle into oven-safe soup cups. Place the prepared bread slices on top and sprinkle with cheese.

Sprinkle caraway seeds and bake in the preheated oven under the grill until golden yellow.
