Ingredients
- 800 g waxy potatoes
- 1 onion
- 50 g watercress
- 6 tbsp sunflower oil
- 250 ml vegetable broth
- 1 bunch radishes
- 4 tbsp white wine vinegar
- Salt
- ground pepper
Instructions

Peel the potatoes and slice them thinly.

Peel the onion and dice it finely.

Sauté the onion and potato slices in 2 tbsp hot oil in a pot, pour in the broth, bring to a boil, cover and simmer for about 15 minutes.

Wash, trim, and cut the radishes into slices or wedges.

Rinse the watercress, shake off excess water, and finely chop the leaves.

Transfer the potatoes with the broth to a bowl, add vinegar, salt, pepper, and the remaining oil; mix in the radishes and watercress, then let it rest for about 20 minutes.
