Ingredients

  • 4 medium potatoes (peeled)
  • 300 g finely chopped kale
  • 60 g Butter
  • 5 tbsp chopped spring onions
  • 7 tbsp warm milk
  • ground pepper to taste
  • 1 tbsp chopped parsley (for garnish)

Instructions

    Quarter the potatoes and cook them in boiling water for about 15 minutes until tender.

    Drain, then mash with a fork until dry and fluffy.

    Cook the kale for 10 minutes in water, remove with a slotted spoon, and let drain. Melt butter in a large pot, add the kale and spring onions, and sauté until translucent while stirring.

    Combine the kale mixture with the potato puree. Add warm milk gradually until the consistency is creamy.

    Season with pepper and garnish with chopped parsley.
