Lamb Chops with Mashed Potatoes

- 12 lamb chops
- 1 tbsp butter
- 1 tbsp Olive Oil
- Salt
- ground pepper
- 800 g potatoes
- 2 Garlic cloves
- 1 tbsp butter
- 150 g crème fraîche
- 6 tbsp Olive oil
- 2 tsp chopped rosemary leaves
- 1 tbsp finely chopped parsley
- Salt

Instructions

Peel and roughly chop the garlic. Peel, wash, and boil the potatoes with the garlic in salted water for about 25 minutes.

Trim the rib bones from the lamb chops.

Drain the cooked potatoes and mash them hot with butter, crème fraîche, olive oil, salt, and pepper using a potato masher (do not over‑mix). Stir in herbs and adjust seasoning. Keep the mash warm.

Sear the prepared lamb chops quickly on both sides in a large pan with hot butter–olive oil mixture, seasoning with salt and pepper as you go.

Plate the lamb chops alongside the mashed potatoes and serve immediately.
