Irish Champ is a creamy potato mash with scallions made from fresh root vegetables. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 kg potatoes (starchy)
  • 200 ml milk
  • 3 spring onions
  • 90 g butter (melted)
  • Salt
  • freshly ground pepper

Instructions

    Cook the potatoes in plenty of water for 20-30 minutes until tender, drain and peel. Clean, wash and chop the spring onions. Warm the spring onions in the milk for 5 minutes, but do not boil.

    Mash the potatoes and gradually add the milk with spring onions. Season with salt and pepper. Divide the mash into four bowls, shape a well in each center, and distribute the melted butter evenly among the four portions. Sprinkle with coarsely ground pepper and serve immediately.
