Ingredients

  • 700 g potatoes
  • Salt
  • 2 red bell peppers
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp Sweet paprika powder
  • 1 tsp white wine vinegar
  • 125 ml olive oil

Instructions

    Peel, wash, and cut the potatoes into small pieces; boil in salted water for about 20 minutes.

    Wash, trim, halve, seed, and slice the peppers into wide strips. Grill them under a preheated grill or bake at the highest setting with the skin side up until they blister and change color. Remove, let cool, peel, and dice; set aside 3 tbsp of diced paprika.

    Blend the remaining pepper pieces with cumin, sweet paprika powder, pressed garlic, 1 tsp salt, vinegar, and olive oil into a smooth puree.

    Drain the potatoes, allow them to steam off slightly, then mash or press through a potato masher. Mix in the paprika puree until well combined.
