Ingredients
- 600 g waxy potatoes
- 200 g Kohlrabi
- 1 egg
- 1 tbsp sour cream
- 1 tbsp flour
- Salt
- Pepper (freshly ground)
- ground nutmeg
- 2 tbsp clarified butter
- 400 g winter radish
- 2 apples (e.g., Boskop)
- 2 tsp lemon juice
- 150 g Sour cream
- 1 tsp Mustard
- 1 tbsp Rapeseed Oil
- Salt
- Pepper (freshly ground)

- 1 garden cress

Preheat the oven to 100 °C fan. Peel, wash and finely grate the potatoes and kohlrabi. Squeeze out excess water from the potatoes and mix with the grated kohlrabi. Stir in the egg, sour cream and flour. Season with salt, pepper and nutmeg.

Heat a little clarified butter in a large non‑stick pan. Drop 2 tbsp of the potato‑kohlrabi dough per patty, flatten and fry until golden brown on both sides. Place the finished patties side by side on a baking tray and keep warm in the oven until serving.

For the tartar, peel and grate the radish on a fine grater. Peel, quarter and core the apples, then grate them. Mix with lemon juice, sour cream, mustard and oil, seasoning with salt, pepper and a pinch of sugar. Chop the garden cress and fold it into the mixture.
