Eastern Vegetable Salad with Spring Onions

Ingredients
- 1 handful radishes
- 1 young head of lettuce
- 0.5 cucumber
- 1 bunch spring onions
- mint (or lemon balm leaves)
- 1 small handful young raspberry leaf
- 200 g cottage cheese
- 3 tbsp coarse mustard
- 1 tbsp honey
- 2 tbsp white balsamic vinegar
- 2 tbsp oil
- Salt
- Pepper
Instructions

Wash and halve the radishes. Clean the spring onions, blanch them, shock in ice water and drain. Wash the lettuce, shake dry and tear into smaller pieces. Peel the cucumber, cut lengthwise in half, scrape out the seeds and slice thinly. Wash raspberry leaves and mint, shake dry. Mix everything and divide onto four plates.

Whisk mustard with honey, vinegar, oil and a splash of water until smooth; season with salt and pepper. Drizzle over the salad together with cottage cheese.
