Ingredients
- 750 g new potatoes
- Salt
- 2 carrots
- 1 Mango
- 125 g mozzarella
- 3 eggs
- 150 g yogurt
- 1 tbsp flour
- 3 tbsp Sweet-Chili Sauce (Asian store)
- Cayenne pepper
- butter (for the dish)
- 3 tbsp peanuts
Instructions

Wash potatoes thoroughly and cook in salted water for about 25 minutes, drain, rinse with cold water, peel and let cool. Peel carrots, boil in salted water for 5 minutes, drain, rinse and slice thinly.

Peel mango and cut flesh from pit, then slice into strips. Slice potatoes.

Cut mozzarella into 1 cm cubes. Whisk eggs with yogurt, flour and Sweet-Chili Sauce. Season with salt and cayenne pepper.

Combine potato, mango, carrot slices and peanuts in a greased baking dish. Pour the yogurt sauce over everything and top with mozzarella. Bake in preheated oven at 220°C for about 30 minutes.
