Ingredients
- 3 egg yolks
- 120 g sugar
- 1 packet vanilla sugar
- 5 drops lemon flavoring
- 200 g ground almonds
- 100 g powdered sugar (and some for working)
- 2 tbsp lemon juice

Preheat the oven. Line baking trays with parchment paper.

Beat the egg yolks with sugar, vanilla sugar and lemon flavoring until fluffy. Add the almonds and knead all ingredients into a smooth dough.

Roll out the dough on a powdered-sugar‑dusted board to about 3 mm thickness. Cut out hearts and place them on the trays. Bake in the oven at 180°C (middle rack, fan 160°C) for 12–15 minutes.

Whisk the powdered sugar with lemon juice into a glaze and brush the still hot hearts with it. Remove from the tray using the parchment paper and let cool.
