Ingredients
- 0.5 untreated lemon
- 2 sour apples (e.g., Boskop)
- 800 g waxy potatoes
- 250 g Camembert cheese
- 250 ml Whipping Cream
- 2 tsp freshly chopped thyme
- Salt
- Pepper (freshly ground)
- 2 tbsp butter

Preheat the oven to 180°C fan.

Grate the lemon zest and squeeze out the juice. Peel, quarter, core the apples, cut into thin slices and mix with the lemon juice and zest. Wash, peel and slice or shave the potatoes into thin rounds. Slice the Camembert and layer it alternately with the apples and potatoes in a baking dish like roof tiles.

Whisk the cream with thyme and season generously with salt and pepper. Pour over the apple‑potato layers, dot with butter chunks, and bake in the oven for 35-40 minutes until golden brown. If needed, pour a little more cream.
