Ingredients

  • 4 egg whites
  • 150 g brown sugar
  • 100 g liquid honey
  • 1 tsp ground cardamom
  • 1 pinch cinnamon
  • 300 g ground, peeled almond kernels
  • 1 pinch baking powder
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 120°C with upper and lower heat. Line a baking sheet with parchment paper.

    Beat the egg whites with the sugar into a stiff, glossy foam. Fold in the honey, cardamom, and cinnamon. Mix the almonds with the baking powder and fold into the egg mixture. If the batter is too runny, add more almonds. Fill a piping bag fitted with a smooth tip and pipe small mounds onto the baking sheet.

    Bake/dry in the preheated oven for 40-50 minutes. When the cookies are firm but still slightly soft, remove them from the parchment paper, dust with powdered sugar, and let cool.
