Exotic Coconut Crescent Cookies

- 60 g coconut flakes
- 200 g cold butter
- 75 g powdered sugar
- 1 pinch salt
- 1 lemon (zest)
- 1 vanilla pod (aroma)
- 225 g flour
- 3 tbsp coconut flakes
- 3 tbsp powdered sugar

Briefly toast the coconut flakes in a dry pan until golden, then let them cool. Quickly knead the diced butter with powdered sugar, salt, lemon zest, vanilla aroma, flour and toasted coconut into a smooth dough by hand. Shape into three rolls about 3 cm in diameter, wrap in plastic film and chill for about 2 hours.

Preheat the oven to 180 °C fan.

Cut the dough into 1 cm thick slices and shape each into crescents. Place on parchment‑lined baking tray and bake in the preheated oven for about 10–12 minutes until light brown.

Mix the toasted coconut flakes with powdered sugar on a plate. While still warm, roll the finished crescents in the sugar mixture and let them cool.
