Potato Gratin with Chicory

Ingredients
- 1 Garlic clove
- 600 g waxy potatoes
- 4 chicories
- 300 ml heavy cream
- 100 g grated cheese (e.g., Gruyère, Emmental)
- 50 g crème fraîche
- Salt
- nutmeg
- Pepper (freshly ground)
- 2 slices of raw ham
- 1 Tbsp parsley

Preheat the oven to 180°C with fan and top heat. Peel the garlic clove and rub the sides of a baking dish with it. Wash, peel, and slice the potatoes very thin or use a mandoline. Rinse the chicories and cut them in half lengthwise. Layer the potato slices evenly in the dish. Whisk together the cream, cheese, and crème fraîche. Season with salt, nutmeg, and pepper, then pour over the potatoes. Place the chicory halves on top, skin side up, pressing gently into the potatoes. Slice the ham into strips and distribute over the gratin. Bake in the preheated oven for about 45 minutes until golden brown. If it darkens too much, cover with foil.
