Chicken Nectarine Skewers

Ingredients

  • 560 g chicken breast fillet (4 chicken breast fillets)
  • 3 nectarines
  • 3 spring onions
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 4 tbsp liquid honey
  • baby spinach
  • wooden skewer

Instructions

    Rinse the chicken fillets under cold water, pat dry and cut into bite-sized cubes.

    Wash the nectarines, halve them, remove pits and cut into wedges. Wash the spring onions, trim and cut the white and light green parts diagonally into about 4 cm pieces.

    Thread the chicken, spring onions and nectarines onto wooden skewers. Brush with oil and season with salt and pepper.

  4. 4.

    Grill the skewers over high heat, turning for 6–8 minutes, brushing with honey during the last minute of grilling.

    Meanwhile wash the spinach, dry and arrange on four plates. Place the skewers on top.
