Baked Chicken Breast

Ingredients
- 4 chicken breast fillets (about 180 g each)
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 150 g cooked ham (thinly sliced)
- 1 Spring onion
- 1 small onion
- 250 g pineapple (canned)
- 150 g cheese (sliced, e.g., Gouda)
Instructions

Preheat the oven to 200°C with fan and top heat.

Cut each chicken breast lengthwise in half. Season with salt and pepper, then sear all sides in 1 tbsp hot clarified butter until golden.

Dice the ham into small cubes. Trim the spring onion, cut a few green strips for garnish, and dice the rest. Peel the small onion and dice it as well. Sauté the diced onions and spring onion pieces in the remaining fat until translucent.

Drain the pineapple, cut the fruit into small pieces, and mix with the ham and onions. Place two chicken breast halves side‑by‑side in a small or large baking dish, spread the ham mixture over them, and top with cheese slices.

Bake for about 20 minutes until the cheese is bubbly and golden. Garnish with spring onion strips before serving.
