Ingredients

  • 200 g Flour
  • 1 tsp Baking powder
  • 50 g cocoa powder
  • 100 g brown sugar
  • 3 tbsp coconut flakes
  • 150 g cold butter
  • 1 egg
  • 75 g peeled almond kernels

    Mix the flour with the baking powder, cocoa powder, brown sugar and coconut flakes, mound on a work surface and press a well in the center. Cut the butter into cubes and place around the edge. Pour the egg into the well and quickly knead everything by hand into a smooth dough. Shape the dough into a roll about 5 cm in diameter, wrap in foil and chill in the refrigerator for 30 minutes. Meanwhile, roughly chop the almonds. Preheat the oven to 200°C fan. Line a baking tray with parchment paper.

    After chilling, unwrap the dough from the foil and cut it into slices about 1 cm thick with a large knife. Press a few chopped almonds into each slice and place on the prepared trays. Bake in the preheated oven for 10–12 minutes. Remove the cookies from the oven and cool on a wire rack.
