Ingredients

  • 2 kg starchy cooking potatoes
  • Salt
  • 2 slices white bread
  • 2 tbsp butter
  • Nutmeg (freshly grated)

Instructions

    Wash 750 g of potatoes and boil in salted water for about 30 minutes.

    Remove the crust from the white bread, cut into small cubes and fry in hot butter until golden yellow; remove and drain on kitchen paper.

    Peel the boiled potatoes and press through a potato masher. Peel the remaining potatoes, grate finely and squeeze out excess moisture with force. Capture the juice and wait until starch settles, then pour off the water and add the starch to the pressed potatoes. Add the mashed potatoes while still hot over the grated ones, season with salt and nutmeg, mix well and shape into dumplings. Place a few croutons in the center of each dumpling. Drop the dumplings into boiling salted water, reduce heat and simmer for about 25 minutes until cooked through.
