Ingredients
- 1 kg turkey breast (turkey breast)
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 600 g young green beans (cucumber beans)
- 2 tbsp butter
- 20 g pine nuts

Wash, trim and cut off the ends of the beans. Blanch in heavily salted boiling water (1 tsp salt) for about 6–7 minutes, drain and shock immediately with ice water, then let dry.

Season the turkey breast with salt and pepper and quickly sear all sides in hot clarified butter in a oven‑proof pan. Transfer to a preheated oven at 180 °C and bake for about 10–15 minutes (depending on thickness) until cooked through.

Just before serving lightly toast the pine nuts in hot butter, add the beans, toss them in the warm butter and heat through, seasoning with salt and pepper.

Place the beans with pine nuts on a plate and arrange the sliced turkey breast on top.
