Potato Dumplings

Ingredients
- 3 kg potatoes (starchy, boiling type)
- 2 stale rolls
- 2 tbsp butter
- Salt

Peel, wash the potatoes and place them in cold water.

Cut 1 kg of them into pieces and cook uncovered for about 30 minutes until they become a puree, without adding salt.

Meanwhile grate the remaining potatoes and press the mixture through a kitchen towel over a bowl to extract liquid; put the mass in a large bowl and loosen it slightly.

When starch has settled from the pressed potato water, pour out the water and add the starch back into the potato mixture.

Then pass the hot cooked potato mixture through a sieve into the raw dough, mix well, season with salt, and work it thoroughly until the dough is smooth, cohesive, and releases easily from the bowl edges.

Bring plenty of salted water to a boil in a large pot.

With damp hands form 12 dumplings, placing some toasted bread cubes in the center of each.

Drop the dumplings into the boiling salted water, reduce heat, and let them simmer for about 25 minutes; do not cook further!

Remove the finished dumplings and serve them in a preheated bowl.
