Ingredients

  • 500 g large dried white beans
  • 4 Garlic cloves
  • 125 ml olive oil
  • 2 bunches spring onions
  • 1 small celery stalk
  • 1 lemon
  • Salt
  • 3 bunches dill
  • 1 bunch fresh mint

Instructions

    Soak the beans overnight in 1.5 l cold water. The next day, let the beans steep in their soaking water with unpeeled garlic cloves and 2 tbsp olive oil over gentle heat for 2 hours, but do not boil.

    Clean and wash spring onions, cut white and light green parts into rings. Clean celery, wash, de-pear, and slice thinly. Peel lemon, cut zest into fine strips, then squeeze the juice.

    Drain beans in a sieve. Squeeze the soft interior from garlic cloves and mix with remaining olive oil, salt, and lemon juice. Finely chop dill and mint.

    Combine warm beans with spring onions, celery, chopped herbs, and the oil-lemon dressing. Mix well and marinate for at least 2 hours. Serve garnished with lemon zest.
