- 2 onions
- 4 Tbsp sunflower oil
- 2 tbsp sultanas
- 4 poultry sausages
- 4 lettuce leaves (e.g., iceberg lettuce)
- 4 Hot Dog buns

For the mayonnaise, rinse the tarragon, shake dry, pick off stems and finely chop. Beat the egg yolk with mustard and a splash of lemon juice. While stirring, drizzle in the oil until a creamy, glossy mayonnaise forms. Fold in the tarragon and season with salt and lemon juice.

Peel the onions and slice into rings. In a hot pan, slowly brown them in 2 tbsp oil until golden brown. Add the sultanas and sauté for about 2 minutes. In another pan, cook the sausages in the remaining oil, turning occasionally, until all sides are golden brown (about 6‑8 minutes).

Wash, trim, dry, and cut the lettuce into strips.

Slice the buns lengthwise and fill with lettuce and sausages. Top with mayonnaise, then scatter the tarragon‑sultana onions on top and serve.
