Ingredients

  • 4 pork chops (about 200 g each)
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp butter
  • 1 onion
  • 2 Garlic cloves
  • 200 ml meat broth (instant)
  • 1 tsp Dried oregano
  • 1 tbsp Lemon Juice
  • 1 tbsp anchovy paste
  • 1 tsp Mustard
  • 2 tbsp capers
  • 12 olives (filled with paprika)
  • a pinch of sugar
  • 2 tbsp crème fraîche

Instructions

    Peel and finely dice the onion and garlic. Season the pork chops with salt and pepper, then sear them in hot butter in a large skillet for about 3 minutes per side; remove and keep warm. Sauté the onion and garlic in the pan fat, pour in the meat broth, add oregano, lemon juice, anchovy paste, mustard, and capers, and simmer for about 5 minutes. Stir in crème fraîche and season with salt, pepper, and sugar to taste. Slice the olives into rings.

    Arrange the pork chops on preheated plates, spoon the sauce over them, and garnish with olive slices. Serve alongside a wild rice mix with scallions.
