Ingredients

  • 200 g digestive biscuits
  • 150 ml lukewarm milk
  • 4 eggs
  • Salt
  • 125 g sugar
  • 1 packet vanilla sugar
  • 200 g poppy seed roll
  • 500 g Low-fat quark
  • 1 tbsp Lemon Juice
  • 5 tbsp flour
  • 1 packet baking powder
  • 350 g sweet cherries (pitted, in jar)
  • butter (for the dish)
  • 60 g almond slivers
  • powdered sugar (for dusting)

Instructions

  1. 1.

    Preheat the oven to 180°C with fan and top heating.

    Soak half of the digestive biscuits in lukewarm milk.

  3. 3.

    Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Mix the yolks with sugar, vanilla sugar, poppy seed roll, quark, lemon juice and the well-drained biscuit mixture. Whisk flour with baking powder, sift over the batter and fold in the meringue.

    Drain the cherries through a sieve and crumble the remaining biscuits coarsely.

    Spread half of the poppy‑quark mixture into a buttered casserole dish, smooth it out and layer the cherries and biscuits on top. Cover with the remaining batter, sprinkle almond slivers and bake in the preheated oven for 35–40 minutes until golden brown.

    Serve dusted with powdered sugar.
