Marbled Chocolate Mousse

Ingredients
- 75 g white chocolate
- 75 g dark chocolate (ca. 60 % cocoa content)
- 2 tbsp oil
- 1 lemon (unprocessed)
- 1 orange (unprocessed)
- 300 g whipping cream (at least 30 % fat content)
- cherries for garnish

Crush the chocolates and place them separately in small metal bowls with 1 tbsp oil each. Wash the lemon and orange hot, then dry and grate finely 1 tsp of zest from each.

Melt the white chocolate over a double boiler and let it cool slightly. Whip the cream until stiff. Fold half of the cream with lemon zest, the other half with orange zest. Pour the cooled, still liquid white chocolate into the lemon‑cream mixture. Gently fold the chocolate into the cream and cover to chill. In the meantime melt the dark chocolate over a double boiler and let it cool slightly. Add the cooled, still liquid dark chocolate to the orange‑cream mixture and gently fold in. Spread the dark mousse over the white mousse. Using a fork, carefully lift from bottom to top through the mixture. Chill for at least 2 hours. For serving, cut small pieces, fill them into cups, and garnish with cherries.
