Ingredients
- 250 g flour
- 0.5 cube fresh yeast (21 g)
- 375 ml lukewarm milk
- 40 g sugar
- 80 g Butter
- 3 eggs
- 1 tsp lemon zest
- 370 g sour cherries (canned)
- 1 tsp Cornstarch
- butter (for greasing)
- 150 g mascarpone
- 2 tbsp vanilla syrup
- 150 ml whipping cream
Instructions

Sift the flour into a bowl, make a well in the center, crumble in the yeast and mix with 4-5 tbsp lukewarm milk and 1 tbsp sugar to form a pre‑starter. Cover and let rise at a warm spot for about 15 minutes.

Melt the butter in the remaining milk and add the rest of the sugar, eggs, and lemon zest to the bowl. Knead everything with the dough hooks of an electric hand mixer until thick, cover, and let rise another 20 minutes.

Meanwhile, drain the cherries, reserve the juice, bring it to a boil in a pot, and thicken with cornstarch mixed in cold water. Cool the cherries and set aside.

Preheat the waffle iron and lightly grease it.

Add 1-2 tbsp of batter to the iron and bake successive golden‑yellow waffles.

Whisk mascarpone with vanilla syrup, whip the cream stiff, fold into the mixture.
