Plum Slices

Ingredients
- 800 g plums
- 200 g butter
- 180 g sugar
- Salt
- 4 eggs
- 400 g flour
- 1.5 tbsp baking powder
- 80 ml milk
- 1 vanilla pod
- 600 g low-fat quark
- 3 eggs
- 3 tbsp milk
- 120 g sugar
- 1.5 tbsp cornstarch
- powdered sugar (for dusting)
- mint (for garnish)

Preheat the oven to 180°C with top and bottom heat. Line a baking sheet with parchment paper.

Wash the plums, halve them and remove the pits.

For the dough, cream the butter with sugar and a pinch of salt, then add eggs one at a time while mixing. Sift the flour with baking powder and fold it in alternately with the milk.

For the quark mixture, split the vanilla pod lengthwise, scrape out the seeds, and mix with quark, eggs, milk, sugar, and cornstarch. Spoon alternating dollops of the quark mixture onto the prepared sheet, then spread the plum halves over them, gently pressing down, sprinkle with sugar, and bake in the preheated oven for 45–60 minutes until a skewer comes out clean.

Remove the finished cake from the oven, let it cool, dust with powdered sugar, cut into pieces, and serve garnished with mint leaves.
