Fluffy Apple Cake with Almonds from the Sheet

Ingredients
- 500 g wheat flour (Type 550)
- 200 g sugar
- 1 pinch salt
- 250 g butter (room temperature)
- 1 packet bourbon vanilla powder
- 6 Eggs
- 175 ml milk (1.5% fat)
- 1 packet baking powder
- 6 apples (e.g., Topaz)
- 200 g almond slivers

Preheat the oven to 160°C fan.

Beat the butter with sugar and vanilla until fluffy. Add the eggs and salt, then beat for about 2 minutes with a hand mixer. Mix flour with baking powder and fold in. Gradually add milk, stirring until a smooth, creamy batter forms; add more milk if needed.

Peel, halve, core, and slice the apples into thin wedges. Line a sheet pan with parchment paper and spread the batter evenly over it. Press the apple slices into the batter and sprinkle almond slivers on top.

Place the sheet pan in the hot oven and bake for 40 minutes until golden brown. Let cool, then cut into small rectangles, lift from the parchment with a cake lifter, and serve.
