Ingredients
- 250 g hazelnuts (coarsely chopped)
- 200 g raisins (soaked in rum)
- 200 g chocolate (coarsely grated)
- 4 egg yolks
- 250 g sugar
- 2 packets vanilla sugar
- 4 egg whites
- 75 g flour
- 1 pinch salt
- 200 g dark chocolate glaze (for the pour)
Instructions

Beat egg yolks with sugar and vanilla sugar until creamy. Fold in stiffly beaten egg whites. Sift in flour, salt, hazelnuts, raisins, and chocolate shavings, gently folding into a smooth dough.

Spread dough onto a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C fan-forced for about 25‑30 minutes until golden brown. Remove and cool.

Cut into roughly 4×4 cm squares, brush with melted glaze, and pull apart immediately so the chocolate drips over the edges. Let dry and serve.
