Plum Muffins

Ingredients

  • 150 g flour
  • 220 g plums
  • 120 g amarettini
  • 1 pinch cinnamon
  • 3 tsp baking powder
  • 100 g yogurt
  • 100 g quark
  • 2 Eggs
  • 70 ml oil

Instructions

    Crush the amarettini or pulse briefly in a mixer to coarse crumbs.

    Wash, pat dry, pit and dice the plums.

  3. 3.

    Combine amarettini (leave 3 tbsp), flour, cinnamon and baking powder. Fold in the plums.

  4. 4.

    Whisk yogurt, quark, eggs and oil until smooth. Quickly fold in the dry mixture and fill paper‑lined muffin cups. Bake in a preheated oven at 180 °C fan for about 25–30 minutes. Let cool slightly, remove from tins and allow to cool completely.
