Cake with Jam and Apple

Ingredients
- 250 g flour
- 125 g butter
- 1 packet vanilla sugar
- 3 eggs (size L)
- 1 pinch salt
- 3 tsp baking powder
- 90 g sugar
- 125 ml milk
- 1 sour apple (e.g., Boskop, Gravensteiner.. )
- 250 g freshly cooked jam (e.g., currant jam, lingonberry jam or cherry jam as desired)

Beat butter and sugar with an electric hand mixer until fluffy. Add eggs and salt and continue mixing. Mix flour with baking powder and stir into the butter mixture along with milk. If the batter is not smooth enough, add a little more milk.

Peel, halve, core, and slice the apple thinly. Warm the jam with 3 tbsp water and stir to loosen slightly. Grease a springform pan well with butter and place 4-5 tbsp of jam in the center. Pour half of the batter over it, arrange apple slices on top, then pour the remaining batter. Spread another 4-5 tbsp of jam on top. Bake in a preheated oven (fan 160°C) for 40 minutes until golden brown. Check with a skewer. Remove the cake from the pan immediately, transfer to a plate and let cool. Serve with coffee.
