Chocolate Pudding

Ingredients

  • 0.5 Bio-Lemon
  • 350 ml milk (1.5% fat)
  • 40 g brown sugar (2 tbsp)
  • 10 g cocoa powder (1 tbsp)
  • 5 g agar-agar (1 tsp)
  • 60 g dark chocolate
  • 20 g chopped almonds (2 tbsp)

Instructions

    Rinse half a lemon in hot water, pat dry and finely grate 1 tsp of zest.

    Boil about 250 ml milk with sugar, cocoa powder, and lemon zest in a pot.

    Meanwhile whisk agar-agar into remaining milk. Roughly chop chocolate. Stir agar-agar mixture into hot milk, simmer for 2–3 minutes off the heat, letting chocolate melt.

    Pour chocolate mixture into four cold‑washed molds and chill for at least 4 hours.

    While cooling, toast almonds in a dry pan over medium heat until golden brown and let cool.

    Serve pudding by pouring from molds onto four plates and sprinkle with almonds.
