Ingredients

  • 200 g honey
  • 50 g Brown sugar
  • 75 g butter
  • 1 egg yolk
  • 1 tbsp cocoa powder
  • 1 lemon (zest)
  • 2 tsp Lebkuchengewürz spice mix
  • 2 tsp potash
  • 2 tbsp rum
  • 300 g flour
  • 100 g almond sticks
  • 50 g finely chopped candied citron
  • 50 g Raisins
  • 130 g powdered sugar
  • 3 tbsp Lemon juice

  • 30 candied cherries

Instructions

    Heat honey, brown sugar and butter in a saucepan. Stir until the sugar has dissolved. Let cool. Whisk egg yolk, cocoa, lemon zest and Lebkuchengewürz into the mixture. Mix potash with rum until smooth and add. Fold flour with almond sticks, candied citron and raisins. Knead all ingredients into a firm dough.

    Dust a work surface with flour. Roll out the dough to about 1 cm thickness. Cut round Lebkuchen about 8 cm in diameter. Preheat oven to 180°C. Prepare baking sheet. Place Lebkuchen on the sheet. Bake for 20 minutes. For glaze, whisk powdered sugar with lemon juice until smooth. Brush cooled Lebkuchen and decorate with candied cherries and almond sticks.
