Ingredients
- 500 g plums
- 0.5 tsp ground cinnamon
- 1 pinch ground cloves
- 1 pinch star anise
- 30 g coconut blossom sugar
- 1 Lime
- 1 Egg white
- 1 pinch salt

Wash, pit, and halve the plums. Mix with cinnamon, cloves, star anise, and 20 g coconut blossom sugar, then distribute into four oven‑proof ramekins. Cut the lime in half and drizzle its juice over the plums.

Beat the egg white with a pinch of salt until stiff peaks form. Gradually fold in the remaining coconut blossom sugar, continuing to beat until the mixture is glossy and firm. Spoon it over the plums. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 15 minutes, or until the meringue edges start to brown. Remove from the oven and serve.
