Poppy Seed Pudding with Plums

- 1 Vanilla bean
- 300 ml milk
- 50 g sugar
- 75 g fine wheat semolina
- 2 egg yolks
- 1 Egg white
- 2 tbsp poppy seeds
- 400 g plums
- 1 untreated lemon
- 50 g sugar

Split the vanilla bean and bring the milk to a boil in a small saucepan. Remove from heat and let steep for 15 minutes. Discard the bean, add sugar, bring to a boil again, then sprinkle in the semolina while stirring until it thickens. Transfer to a bowl, stir the egg yolks into the still-warm mixture. Whisk the egg white very stiffly and fold gently with the poppy seeds. Rinse the molds cold, fill them with the batter, and chill for at least 4 hours.

For the compote wash, halve, and pit the plums. Zest the lemon and juice half of it. Boil the juice with sugar and 3-4 tbsp water. Add the plums, let cool.
