Kaiserschmarrn with Plums

Ingredients
- 600 g ripe plums
- 150 g sugar
- 1 cinnamon stick
- 1 star anise
- 150 ml dry red wine
- 3 eggs
- 225 g flour
- 50 g sugar
- a pinch salt
- 50 g quark
- 350 ml milk
- powdered sugar (for dusting)

Wash, halve and pit the plums for the compote. Mix with sugar and spices, bring to a boil in a pot. Deglaze with wine and simmer over medium heat for about 5 minutes. If desired, thicken with cornstarch mixed in cold water, remove from heat and let cool.

Separate the eggs for the batter. Whisk flour, sugar, salt, quark, egg yolks and milk until smooth, then rest for about 5 minutes; adjust milk quantity if needed.

Preheat the oven to 180°C fan. Butter a baking dish or four individual ramekins.

Beat the egg whites stiffly and fold into the batter. Pour into the prepared dish(es) and bake in the oven for approximately 15 minutes.

Remove from the oven, tear the cake into pieces with a spoon or ladle. Dust with powdered sugar and serve on a plate topped with plum compote.
