Ingredients

  • 200 g Flour
  • 100 g ground, peeled almond kernels
  • 100 g sugar
  • 1 pinch salt
  • 1 egg
  • 200 g butter
  • flour (for working surface)
  • 150 g strawberry jam
  • 4 tbsp powdered sugar

Instructions

    Mix the flour with almonds, sugar and salt; sift onto a work surface. Create a well in the center, crack the egg into it, and scatter butter pieces around the dough. Quickly knead all ingredients by hand into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Knead the dough again on a floured surface, roll it out to 0.4 cm thickness, and cut out flowers and hearts using appropriate cutters. From half of the cut shapes, cut a small circle or heart in the middle. Place all cookies on a baking sheet lined with parchment paper. Knead any remaining dough together and cut more shapes.

    Place the trays in the preheated oven and bake the cookies for about 10 minutes. Remove, lift them off the parchment with a spatula, and let cool.

    Warm the jam, strain it through a sieve, and spread it on the full-sized cookies. Sprinkle powdered sugar over the center-cut cookies and place them on top of the jam-coated ones. Press lightly, allow to dry, and store in a tin lined with butter paper until ready to eat.
