Pineapple Tomato Relish

A fresh fruit‑vegetable relish featuring juicy pineapple and ripe tomatoes, perfect as a bright condiment or side dish.
Ingredients
- 2 oranges (juiced)
- 1 lemon (juiced)
- 200 ml plum wine
- 1 pineapple (fresh)
- 4 tomatoes (ripe)
- 2 red chilies
- 25 g ginger
- 3 tbsp starch
- Salt
- Cayenne pepper
- rice vinegar (for seasoning)
- 1 stalk Thai basil (chopped)

Whisk starch into a little cold water. Peel the pineapple with a sharp knife, cut lengthwise in half, remove the core and dice ¾ of it. Puree the remainder finely and combine with orange juice and wine in a small pot; bring to a boil, stir in the starch and thicken. Add finely chopped chili and ginger. Simmer tomatoes, peel, halve, seed and cube them, then mix with pineapple cubes into the hot mixture, set aside and cool.

Season with salt, a pinch of cayenne pepper and rice vinegar. Fold in basil and serve.
